The name Ottoman was first used by the French, for what reason i dont know. Mehmed is the shrotend version of Muhammad, Fatih Sultan used so the name Mehmed first so that the name Muhammed (name of the holy Prophet pbuh) would not be used wrongly.

A curious point about Arabic names used by Turks, why do Turks often change the pronounciation of these names; eg. Umar-Omer, Jamal-Jemal, Abu Bakr- Ebu Bekr

Because these names/words dont fit the Turkish grammatic and linguistics. For example, as you know, we have the "byk nl uyumu" in our language, so we cant say simply "Muhammed", but "Mehmed". And because words dont end with soft sounds like "d", most of the foreign words/names that get into Turkish and are used dont end with this sound, but instead of "b,c,d,g,", "p, (ch), t, k". so "Mehmed" becomes "Mehmet".

We dont have the sound "th" in Turkish, so we call Uthman as "Osman".
